Thursday’s Thought: Be Prepared For Busy Days

Hello Dear Friends,

Today was a crazy busy day running loads and loads of errands. My Thursday’s Thought: Be Prepared For Busy Days, applies today!! With so much going on today, in olden days I would have stopped and picked up something through a drive through window!!

I am so thankful to have set up my kitchen pantry and freezer with a quick, money saving,  healthy go to meals.

One of our favorites is this sausage veggie over brown rice dinner.

I have several quick meals that do not require long defrosts and are healthy. 🙂 I encourage you to build your recipe files and freezer/pantry with a few of these “go to meals”.

Recipe is as follows.

Sausage and Veggie Over Brown Rice 

Heat a large skillet. Add 1 T. of coconut oil once pan is hot. Penny a turkey sausage. Add to pan once oil is hot. Rough chop 1 onion and add to pan. Once onion begins to caramelize and sausage browns, add red, yellow, orange or green rough chopped peppers.

At the same time prepare your brown rice. If in a real pinch for time, I will prepare beautiful and light basmati brown rice. (I always warm all rice in 1 T. of olive or coconut oil before adding my water. Once I smell the nutty smell is released, I then add my water, bring to a boil and then cover until cooked.)

Try to time all to end at the same time. 🙂

Make a bed of rice on each plate and top with the yummy sausage and veggie mixture! Enjoy!! 😉
