Lovely Dinner of Leftovers

Hello Dear Friends,

Do you struggle with leftovers? I do!! I honestly have let too many things linger a bit too long to our chickens delight!! (Our chickens/all our poultry eat all the leftovers and scraps.)

Our sweet children made a lovely Easter dinner of roasted turkey breast, mashed potatoes, green beans with onions, cranberry orange stuffing and cranberry sauce. We also have some leftover quinoa (gf) pasta and some fruit that needs to be eaten.

So tonight for our menu:

In the first pan- I sprayed non stick spray and layered stuffing, green beans with purple onions, topped with turkey. I poured some tasty chicken broth on top and will slowly heat. I will serve this with a yummy cranberry sauce. πŸ™‚ YUM!!

In the second gf pan- I sprayed non stick spray and layered quinoa pasta, green beans with purple onions with turkey on top. I poured some more of the tasty chicken broth on top and will slowly heat as well. Mmmmm….more yumminess!!

I also made a scrumptious fruit salad with all the end of the pay week healthy and mostly organic fruit (we live in a small town and it is a special order to have organic) and then I squeezed an organic lime on top of: chopped apples, pears, mango, cantaloupe, honey dew, pineapple, bananas, kiwi and topped with yummy blueberries and chopped sprouted almonds!! πŸ˜‰

Mmmmm….I can’t wait to see everyone’s thoughts on “leftovers”!! It is a feast!! Thank you Lord for such easy makings for this tired recouping Mommy! πŸ™‚
